My New Kick #Whole30 challenge! I will get healthy...


No Dairy, No Grain, No Legumes (beans), No Sugar... At first I though NO way! But for 2012 I felt up for the challenge. I was bound and determined not to give up on this and I will complete my Whole 30 challenge after all it is only 30 days and I want to feel healthy this year. My super healthy, fit and fab friend KC turned me on to a site http://whole9life.com/ and the Whole 30 challenge to recharge your batteries for the New Year... It is kind of Paleo but more defined... Basically no processed foods or sugar! Eat your veggies, fruit, and protien... The testimonials were great but I was a skeptic... So January 1st started and I have never felt better... I had a couple of days of a headache and I did get a cold but I pushed through and I feel so good. My kids are 1 and 3 and they use to wear me out and now I am still feeling charged up by the end of the day...

So here we go I finished 12 days and I have 18 more... and I will not give up on this resolution!

Will post some recipes soon! Whole 30 approved!

Red and White Lolipop decorations for your yard! DIY!





I was out on my travels a couple of months ago and I saw adorable red and white candy decorations to put out in front of your house for the holidays... I loved them and since I love red and white for Christmas decorations they were pretty hard to pass up but like a lot of Christmas decorations they were pretty spendy... so I was bound and determined to make them myself!

And this is what I came up with...





With my favorite soldiers my cousin made for me umpteen years ago...

And the overall look...


Here is what I did...
I got some foam circles, painters tape, wooden dowels, and some red spray paint and I went to town... It was pretty fun to do and did not take very long at all... You can make any design you want by putting the painters tape on the foam (stripes were easiest for me) and then spray away. Wait until the paint dries to remove the tap and your lines will look awesome. Stick the wooden dowel (bought from home depot) into the foam and your Candy Pop is almost ready...

To finish, I wrapped them with cellophane and a red bow and they have held up to rain and a major wind storm we experienced in Southern Cal...

Orange Marmalade Cookies! Great food blogger cookie swap! #fbcookieswap





This year I joined in the Great Blogger Cookie Swap and it was a blast! I sent out 3 dozen of these orange marmalade cookies and received 3 dozen fantastic cookies in return....It was a great treat to get  a tin of a dozen cookies over three days!

Here is a pic of the the orange marmalade cookies before they were wrapped up and sent all over the country!

  
I got this recipe out of the Neiman Marcus Taste cookbook... I always assumed recipes from this book would be over the top complicated, but I have to say pretty easy!


Orange Marmalade Cookies

Ingredients:

3 cups all purpose flour
1/2 tsp baking soda
1/2 tsp Salt
1/2 cup unsalted butter
1 cup sugar
2 eggs beaten
1 cup orange marmalade

For the Icing
2 tsp grated orange zest
1 tsp grated lemon zest
1/4 cup fresh squeezed orange juice
1 tsp fresh squeezed orange juice
3TBS unsalted butter softened
3 cups confectioners sugar
1/8 tsp kosher salt

Preheat the oven to 300 degrees (butter the cookie sheet)

Sift the flour, baking soda, and salt in a bowl and set aside. Place the butter in a bowl of an electric mixer fitted with a paddle attachment on low. Add the sugar and continue to beat for approx 2 min. until light and fluffy. Add the eggs and mix well. Add the reserved dry ingredients and marmalade and mix thoroughly. Using a teaspoon , drop the cookie dough onto the prepared cookie sheet. Press the cookie down with your fingers to make the cookie more flat. Transfer to the oven and back for 20 min. or until the cookies are light brown. Let the cookies cool completely before icing!

Icing:

Combine the orange zest, lemon zest, and juices in a bowl  in the bowl of an electric mixer fitted with a paddle attachment, beat the butter on low speed. Add 1 cup of the confectioners' sugar and blend thoroughly. Add the rest of the sugar, salt and citrus juice mixture and blend until smooth.

After the cookies have been cooled completely ice the cookies with a knife!

Smores Stix! Great last minute take along Dessert...


The other day life happened and I had grand plans to make cupcakes sprinkled with candy canes etc... But the kids wouldn't nap we were overly busy and I ran out of time. I had signed up to bring a dessert to this holiday get together and it was four and I had nothing... So I checked out the pantry and I had enough to make these little goodies... These take 20 minutes max and you are ready to go!

Smores Stix!

Marshmallows
Graham Cracker Crumbs for pie crusts (I had a bag from the grocery store)
Chocolate (I used semi-sweet, bittersweet and some chocolate candy coats) Use what you have!
Lollipop sticks

1. Put the Graham Cracker Crumbs in a bowl and lay out a piece of Parchment paper to rest the pops on once you have finished.

2. Melt the chocolate in a microwave safe bowl on 50% power for 1 min. and full power every thirty seconds until melted.

3. Stir the chocolate until smooth and mixed. Dip the pop stick in the chocolate (approx half an inch) and insert into the Marshmallow. this will help the stick stay...

4. Dip the marshmallow in the chocolate however far you want it.

5. Then Dip the chocolate/marshmallow in the Graham Crackers and coat on the top and the sides.

6. Place on the parchment paper Graham Cracker side down (with the sticks up) until the chocolate dries.

7. If you are in a hurry like me pop them in the fridge to set!

I put them in mason jars with a bow and off we went to our party... :) These were super easy and a big hit!

Gobble Gobble! Turkey Aprons!


Happy Thanksgiving to all! I first saw this idea for turkey aprons on on a great blog for kids activities and I had to give it a shot! Here is the link to the original post Kids Activity Blog. They have great ideas for kids, check them out! Anyway, I decieded to make aprons for my kids so they can wear them on thanksgiving and we could also have a little memory handprint for this year. And I love them!!!

Here's how you do it...


Use non-toxic fabric paint and paint brushes (all bought from Michaels):


Kids Aprons! So cute and fit young toddlers...











Paint your little ones hand... use whatever colors you want (or they want after all it is there Turkey!)


Place their hand on the apron and apply a little pressure to make sure the paint transfers.






Lift their hand and TA DA they have a turkey!!!


Add some feet and a beak and let dry according to the paint directions and you are ready to go!

Super Easy (and relatively healthy) Orange Chicken

One of my favorite indulgences is orange chicken from Panda Express. I know how unhealthy it is so it almost kills the experience of eating it. As a result, I found a lighter (in calories and fat) and super easy way to make it at home on my own. I love it just the same and feel so much better knowing it's a healthier version of the original.







Ingredients:

Chicken breast tenders, one pack
Trader Joe's "General Tsao" sauce in a bottle, approx. 1/2 the bottle
Green onion, 3-4 stalks, diced (white and green parts)
Plain white flour (or corn starch), approx. 1 cup
Canola or vegetable oil, approx. 3-4 tablespoons
Salt and Pepper, to taste











Step 1:

In a large mixing bowl, dump a cup or more of flour
Step 2:
Cut up the chicken tenders using kitchen shears into small bite sized pieces. Dump them into the bowl with the flour (do not mix yet)
Step 3:
Top the cut up chicken in bowl with salt and pepper. Mix with the flour until each piece is completed coated in flour. Add additional salt and pepper if you desire.
Step 4:
Heat approximately 3-4 tablespoons of oil in a large wok or frying pan. Enough to coat the bottom of the pan with a shallow pool of oil. You know it's hot when you flick some water from your finger tips and it splatters a bit. When that happens, add the coated chicken pieces to the pan, slowly and carefully. Beware of splatter.
The oil soaks up fast so keep tossing with tongs and mix the chicken in the pan with the oil. If you need to, slowly add more oil, little by little, if needed. Adding too much, too fast, cools the pan and makes the crust on the chicken less crisp.
Step 5:
When the chicken pieces are browned, slowly add the sauce, little by little, in a circle around the outside of the pan. Toss to coat the chicken. Add more sauce if needed/desired. Add the chopped green onion. Cook for a few minutes and either cover to serve later or serve immediately with your favorite stir fry vegetables and rice.
